Master Origin Nicaragua La Cumplida Refinada is the first seasonal coffee from Nicaragua that features a distinctive aroma all thanks to Nespresso’s collaboration with micro farmers to keep traditional coffee craftsmanship alive. The Master Origin Nicaragua uses the Arabica coffee bean and the coffee gets its sweetness from the rare fermentation process. This laborious process requires master farmers to meticulously monitor the process to bring out a smooth brew paired with sweet cereal notes, whilst the Nicaragua La Cumplida Refinada uses a yeast fermentation technique that brings out smooth notes of candied cherry and pomegranate.
The fermentation stage is when the coffee unveils its true flavour and aroma and the conditions a coffee farmer chooses to ferment the coffee is essential for its taste. The unique fermentation process was what attracted Nespresso to Nicaragua. Nespresso’s coffee experts worked collaboratively with local farmers in the La Cumplida region to perform numerous trials to make improvements to the fermentation process. For instance, ripe coffee cherries were sprayed with natural yeast and allowed to ferment for 72 hours, unlocking wild fruity notes. The coffee was then dried for 2-3 weeks under strict monitoring of temperature and time to reveal its distinctive aromas.
